    Castilla La Mancha



    Castilla-La Mancha is an autonomous community of Spain, among its major provinces are Albacete, Ciudad Real, Cuenca, Guadalajara and Toledo.

    It is located in the heart of the Iberian Peninsula, bordering Castilla y Leon, the Community of Madrid, Extremadura, Aragon, Valencia, Murcia, and Andalusia. Its capital is Toledo, although the city of Albacete is the most populous.

    The cuisine of Castilla-La Mancha certainly is a review of the universal work of Miguel de Cervantes and his Don Quixote. This can be considered a true compendium of Manchego cuisine, with reference to some 150 recipes and dishes from the Community.

    The meat is abundant and usually from sheep, goat and cow to a lesser extent.
    Among the dishes, we can find destacos Crumbs, Miguelitos of Roda, Ajoarriero, among others.

    Castilla – La Mancha region is  adorned by its archeology, castles, and natural sites, among which we find Castle Casarrubios del Monte, the archaeological sites San Pedro Mata or Castle Consuegra, which is well-known thanks to its close analogy with the historical Don Quijote.
