This is one of the most widely known Spanish dishes worldwide, simple to make and versatile since it welcomes the use of ingredients other than the traditional ones in accordance with the chef’s inspiration.
How to make an extraordinarily good potato omelet in a simple way.
Make sure you have the following ingredients:
- 3 potatoes
- 6 eggs
- 1 small onion
- 1 green bell pepper
- Venta del Barón Extra virgin olive oil
- Añana wine salt to taste
- Pepper to taste
- De la Vera Spicy Smoke paprika
Peel the potatoes and cut them diagonally in half, then cut each chunk in half-moons of 1,2 cm, place them in a frying pan along with the onion, the bell pepper cut into squares, a little Añana wine salt, pepper and a good drizzle of extra virgin olive oil, let it simmer for 30 minutes. Remove from the frying pan and reserve.
Beat the eggs in a bowl and add some Añana wine salt, a pinch of De la Spicy Smoke Paprika, add the fried potatoes we had reserved, mix well.
Get the same frying pan you used to fry the potatoes, dry it with absorbent paper, add a little bit of extra virgin olive oil and heat up, pour in the potato and eggs mix, detach the edges from the frying pan and invert until both sides are well cooked, finally taste it!
